Tomami = Tomato + Umami.
A term we came up for this unique gazpacho, which brings umami to a new level.
Umami (うま味) is one of the five basic tastes (along with sweetness, sourness, bitterness, and saltiness) used by the Japanese. It can be literally translated as "pleasant savory taste". (Source : https://en.wikipedia.org/wiki/Umami)
We know that Fall has arrived, but on days that are still a bit warm and muggy, you just want something light and refreshing, yet savory and healthy! Because of the subtle flavor of QUOlixir, it can be used in very versatile ways. Try this Japanese-inspired Tomami Gazpacho, and you'll be surprised how healthy can be so delicious!!
Here is how!

Total Time : 1hr (Prep 30 min, inactive 30 min)
INGREDIENTS:
400g vine-ripened tomatoes, cored and chopped
250ml Daishi Stock
50ml QUOlixir, or to taste
100g cucumbers, chopped
50g chopped red bell pepper
50g chopped yellow bell pepper
2 roasted garlic cloves
15g chilli pepper red, deseeded and chopped
1 tablespoon balsamic vinegar
1 teaspoon sea salt
1/2 teaspoon Kuroshichimi (Japanese black seven spice)
Slice of crusty bread, chopped
2 tablespoon shredded fresh Japanese Oba/ Basil
A couple tablespoons of extra virgin olive oli
DIRECTIONS:
- Place all ingredients into a large mixing bowl and stir to combine. Leave to marinade for at least 30mins or overnight.
- Put the mixture into a blender and whiz until smooth. Taste and adjust the seasoning as necessary. You might need a little more QUOlixir and balsamic vinegar if you like it tangy.
- Cover and chill again, until it's cold enough and ready to serve.
- To serve, sprinkled with shredded Japanese oba/ basil, an extra drizzle of extra virgin olive oil and toast alongside.
